10 Easy Recipes for Delicious Leftover Thanksgiving Sandwiches

If you’re like me and you spent the day cooking up a feast, only to find yourself with a lot of leftovers, then I have good news: It’s time for Thanksgiving sandwiches! I’m not talking about your average sandwich either – these ones are special. They use all the delicious bits that usually get thrown away (like leftover turkey and stuffing), but put them together in ways that result in something even better than what you had on Thanksgiving Day itself. So if you’re looking for some new ways to use up all those leftovers from your holiday meal, look no further—I’ve got ten delicious recipes for some seriously satisfying sandwiches.

Micki’s Turkey Cranberry and Cream Cheese Comfort Sandwich

  • Leftover turkey
  • Leftovers from the cranberry sauce you made (or bought)
  • Cream cheese, softened to room temperature

This sandwich is super easy to make. Just put some cream cheese on two slices of bread, layer them with a thin layer of leftover turkey and leftover cranberry sauce, then top with another slice of bread and cut in half. If you have any leftovers from your Thanksgiving meal that haven’t been eaten yet–and if not, what are you waiting for?–this is an excellent way to use them up. A club sandwich is a classic American sandwich that’s traditionally made with turkey, bacon, lettuce and tomato. The Ultimate Leftover Turkey Club is the same thing but with one crucial difference: you make it with leftover Thanksgiving turkey instead of regular deli meat.

The Ultimate Leftover Turkey Club starts off with two slices of whole wheat bread (or your favorite sandwich bread). Spread mayonnaise on both sides. Layer sliced turkey breast on one slice of bread; then add sliced avocado, tomato slices and lettuce leaves (or arugula).   • Buy some Brie cheese from your local grocery store and slice into thin pieces.

Next, you’ll want to assemble your sandwich: spread butter on two slices of bread then place one slice in between two other slices to make it easier for you when eating later! Place the turkey breast on top of this stack and then add cranberry sauce followed by thinly sliced brie cheese before closing up that bad boy! Now all that’s left is heating up your panini press or frying pan at medium heat until golden brown perfection occurs–then enjoy!

To make this sandwich, you’ll need:

  • Leftover turkey from Thanksgiving or deli roast turkey (about 1/2 cup)
  • Sliced avocado, diced tomato and red onion for topping the sandwich. You can also add lettuce if desired.
  • Mayonnaise

To cook the turkey: Preheat your oven to 350 degrees F (180 degrees C). Place the foil-wrapped turkey breast in a baking dish and bake until heated through and juices run clear, about 20 minutes. Remove from oven and let rest 10 minutes before slicing into thin slices across grain of meat. To make sauce: Combine mayo with mustard powder, salt & pepper in small bowl; stir well until combined.”

  • 2 cups grated cheddar cheese
  • 1 pound cooked turkey, chopped into bite-sized pieces (or use leftover Thanksgiving turkey)
  • 8 slices bacon, cooked and crumbled
  • 1 can jalapeno poppers with cheese, cut into quarters

Open-faced Turkey Sandwich Melt

  • Heat a panini press to medium-high.
  • Spread the remaining cranberry sauce on each slice of bread, then top with turkey and stuffing.
  • Place sandwich in the panini press and cook until golden brown on both sides, about 5 minutes per side (depending on your machine).

Turkey and Cranberry Quesadillas

  • Combine turkey, cranberry sauce and mayonnaise in a bowl.
  • Heat quesadillas in a skillet or on the grill. They’re ready when they’re golden brown and crispy on both sides.
  • Serve with a salad for an easy dinner!

Buffalo Turkey Sandwiches with Celery Yogurt Spread

  • In a small bowl, combine mayonnaise and ranch dressing; stir until well blended. Add celery salt and season with salt and pepper to taste.
  • Spread each slice of bread with 1/4 cup of the celery yogurt spread and top with turkey slices, Swiss cheese, lettuce, tomato, onion and remaining 1/4 cup celery yogurt spread (or you can use more if you want).
